It's Give Away Time...

As I was wandering through the photo universe the other day, otherwise known as Flickr, I came across the cutest thing I have ever, (well maybe not ever, but this week anyway) seen in my life! Miniature Cakes as a pop. I instantly became obsessed and have not been able to stop thinking about them until I had a chance to make them this afternoon.

The inspiration from these came from KellBakes for Baking 911. The website Baking 911 has a complete tutorial on how to make their rice krispie version of these little gems.

Mine, though are made from cake pop mixture, because, well that's how I do :)

I love them!!!


At some point I will breakdown all the steps in how I made them,  since if I haven't mentioned it already.....I love, love, LOVE the idea of them so much, that I know I will be making many more of them.


Birthday cakes, holidays, special occasions, baby shower favors!!!! The potential for cute is unlimited

Valentine's Day Inspired Cupcakes

Valentine's day is a little less than a month away and I wanted to try make sure I made some holiday inspired cupcakes. I had planned on doing so many holiday inspired treats this past year, but time slipped by faster than I had anticipated and so I didn't have a chance to cross off many of the projects I had planned on doing.

With the Christmas holiday season behind me, I have had the pleasure of finding a few slivers of moments to create a few new things. Starting with some new cupcake toppers, Valentine's day cupcake toppers made with royal icing.

In the past few months, I have become obsessed  interested in learning everything there is to know about working with Royal Icing. I look at some of the decorators; be they cookie, cake or cupcake artists and I'm blown away at the potential of this edible medium.

It has become a total obsession.....

With the few moments of downtime I found, I created some cool cupcake toppers for Valentine's day...

To make them I printed out a circle template and covered it in wax paper. I outlined and flooded each topper with white royal icing. After they dried...I made some swirls...



And some hearts.....


I piped in some green and pink for leaves and flowers...


And I put them on cupcakes....


I think they look lovely...


Because I was having so much fun...I even made some random hearts and ribbon roses...


But the best part of it all was the cookie I made...


Which has made my obsession with royal icing grow even more...


I know it's a bit on the rough side...but I love it so much! It reminds me of the paintings I used to make way back in the day........before kids.......when I had the luxury of a thing called "time" to actually do things!!

Monster High Logo Cupcakes

If I knew how absent minded I would become after having kids, I may have had second thoughts about the whole shabang. I seriously waste a good hour or two (maybe even more) of my day(s) trying to figure out what I am supposed to be doing, why I came into a certain room, where my phone is (sadly enough,while I'm holding it), where my sunglasses, key, drink, shoes, hat...yadda..yadda..yadda.

Does ANYONE else have after baby memory issues/cognitive fog like this or is it just me??  My lack of short term memory and overall fuzziness in thinking is seriously putting a cramp in my whole I used to be so quick and witty, now I'm lucky if I make sense when I speak vibe.

Whatever....

On a lighter note though, I had no idea that Monster High was so popular with little girls today. I get so many e-mails about them that I thought it appropriate to make another version of them.....

Because a lot of you keep asking me for it anyway :)



Be mindful....I found these a bit more difficult than the skullete to make, although they do look really great when finished. Because the details are so small and close together, it gets a bit tight...if you don't have a problem with that cool, keep on reading! Otherwise you may have an easier time making this version or you may even want to try making the cookie version which can be found {HERE)

Either way this is what you will need to make the toppers!


  • 4-5 decorating bags 
  • 4-5 couplers 
  • #1, 2 Decorating Tips
  • Logo Template (I can help you with this)
  • Wax Paper
  • Royal Icing
  • Pink, red , blue & black GEL food coloring
      • Thin tipped food paintbrush (or toothpicks)
  • Time and Patience

If you are unfamiliar with this way of making a topper, please refer to one of the more in depth tutorials which you can find {HERE}. It explains in  every detail, what you need to know in order to make a topper. But if you have any other questions, please feel free to contact me or just comment below.

Soooooo, before you begin anything...download and print out the logo template {HERE}


Tape the template to a piece of wax paper, so that you are able to see the image through it. This is what you will use to pipe outline of the logo.




Now I originally said that you would need a # 1 & 2 decorating tip and well, I lied. Not because I wanted to mislead you, but  because I used a PME # 1.5, which you may or may not have...


If you don't use whichever tip you feel more comfortable with. I just personally like the 1.5, which is not a tip you can generally run out to the store and buy, but since I have it and love, love, LOVE it, I I use it..A LOT :)




Whatever tip you choose, begin outlining the logo with your black icing (piping consistency). I waited to do the banner last, no reason why, it's just the way I choose to do it.When you are finished outlining it, it will look a bit similar to he image below.  


I did make two versions of this topper, one with stripes on the pink area of the crest and one without stripes. Personally I liked it better without the stripes, it just ended up looking cleaner. But if you have experience with Royal Icing you may do a better job than a newbie like me :) With all that said....let the outline it dry for a bit, 20- 30 minutes should suffice, but you could wait as long as overnight if you like.




 I started flooding all the white areas first with a #2 tip and letting them sit for a few minutes, before using my #1.5 to add each additional color.




When it was all flooded it looked like this....




I let it sit for an hour or so,  before I painted on the eyelashes, you could use a toothpick too. Just use a bit of the black icing to paint with.



I choose to leave the logo blank, but it could be customized with a name or something of that nature to make the toppers more personal. I don't think these are the best I have ever done, but one's that I will steadily improve upon as I play with royal icing more and more!!

Valentine's Day Inspired Jack Skellington

A few weeks back I was asked by a reader (Thank You Sophia) if I could make Jack Skellington cupcakes, similar to the method I used in making the Monster High cupcake toppers. I responded that I would do something after the holidays.

Just an FYI to my readers....if there is something you want to see or want me to make...let me know and I will do my best to make it....I love a challenge :)



Now if you don't know who Jack Skellington is....well where have you been????

Just kidding...really, I am :)

Jack Skellington is a character in the Tim Burton Film, A Nightmare before Christmas. A weird, freaky, stop motion kind of animated flick, in which Jack, the main character tries to save Christmas.

I love making new things, but for the life of me I had no idea how to fit Mr. Skellington into this winter (or really un-like winter if you live in Long Island, NY) season.

Then I started seeing all the Valentines day posts....(really people its only January....just kidding....well slightly.) which kick started my obsession desire to catch up to all the other really prepared people blogging about the "love" holiday taking place on February 14th, so It would appear that I too am prepared...which of course I am not...ha ha!

And what I discovered is that with a little tenderness anyone can become a messenger of love! And you too can become a messenger of love with these cupcakes.




This is what you'll need....

  • Cupcakes...duh
  • 2-3 decorating bags 
  • 2-3 couplers 
  • Jack Template (I can help you with this)
  • Wax Paper
  • Royal Icing
  • Pink & black GEL food coloring
  • Vanilla Frosting
  • Decorating tip # 1, 2 and 1M
  • Toothpicks
  • Time and Patience

If you've been reading any of my other how to posts like this one or this one, then you will have a basic idea of how I make toppers like these. 

This, for the sake of not becoming a recording of sorts stuck on a loop, is an abridged version, BUT if you need any help, please do not hesitate to leave a comment with your question or just send me and email.

First I printed out the template of Jack I created and taped it to my wax paper. The Template for this topper can be downloaded here ---> {Jack Template}


Make your royal icing separate into 4 bowls and color one portion..
  • Gray ( You will need piping consistency)
  • Black(You will need piping and flood consistency)
  • Pink ( you will need flood consistency)
  • Keep a portion white (You will need flood consistency)

With your gray royal icing outline the bottom portion of Jack. And use the black royal icing to outline his head, fill his eyes, draw his mouth (NOT the stitches) and to outline the outer portion of the topper. 

I used a PME 1.5 tip (because I love it) but you could also use a #1 or 2 tip, whichever is easiest for you. Keep in mind, it's a small image, so it will be a bit annoying to outline him or at least it was for me.

After the outline has dried, flood the topper with black, white and the pink icing, in the appropriate areas. I tend to use a 2 to flood, but if it's a really small area I will use a smaller tip. To get into the little crevices, you can use a toothpick to coax it along

Let it dry :) An hour should suffice.

To get the details around his mouth, I used a dab of black royal icing and a toothpick and gently added in the stitched around his mouth.


Do not remove toppers from the wax paper, until it is COMPLETELY dry. When you do it will look something like this.

With the toppers done, get your cupcakes ready to frost! I typically use a 1M tip, but I also use another favorite 2D...think ruffles :)

Pipe a swirl onto the top of your cupcakes.


Gently....place the topper onto the cupcake and press down with gentle, but equal pressure. If you feel inclined you can add sprinkles to the frosting, but do this before you add the topper!!


How fun are these??


Just a little twist of fun added into a holiday that is typically so far removed from skeletons as humanly possible!

Super Mario Brothers Inspired Cupcakes

I made these last minute for a friend that ALWAYS allows me to push through any type of creative barriers I might think I have at any given moment in time!

Since I was making these little guys at 5:00 am and my kids would be awake around 7:30 am, I didn't have much time, so I skipped making Mario's buddy Luigi.....next time though! 

I don't have a ton of experience in fondant, but I love, love have mentioned LOVE working with it! The only other thing I have used it for was the Rapunzel Tangled Tower and WWE Belt Cake I made.  I like to think that with each new project I get a little better.

I was going to do a break down type of tutorial for these, but I there is a lot of stuff going on. So if you would like to make these yourself, they aren't as hard as you may think, let me tell you why.

A long time ago when I was younger....okay MUCH younger, I went to art school in NYC. My dream at the time was to be a cartoon animator. But given my immaturity at the time, my low-self esteem and poor self image...I just wasn't cut out for the self criticism that ran rampant throughout my head as I compared myself against everyone else, who was as I thought at the time were a million times better than me.

So instead of facing my image and esteem challenges head on, I made a lot of poor decisions that led me to flushing 12 years of my life into many different toilets...which is a another story for another time. 

So back to the art school thing, although much of what I learned at that point in time has been lost, there was one or two things I haven't forgotten......

"Everything is made up of one shape or another....figure out the shapes and you can create anything."


That has stayed with me and frees me to break down what I may perceive as difficult image into smaller bits of digestible information. Take Mario for example. All put together he may seem really hard to make....


But if you break him down you can see he is simply a variety of ovals, circles, half moons, semi-circles and wedges. Dissect him  like that and it becomes a bit more simple to make him. Sometimes, I will even trace over and image to get a "feel" of what the differernt shapes may be. Try it, you may surprise yourself :)



And the rest...well they are self explanatory! Ba Bomb is a ball of fondant with circle eyes.


The Toad Stool is a Oval shape and a rectangular bottom shape.


Once you break them down...you can create just about anything!!

How to Make Ice Cream Cone Cake Pops


Hope you all had a great holiday season and a Happy New Year. I don't know about anyone else, but by the time New Years day arrives, I am SO OVER THE HOLIDAY season. All I want to do is to take down all the decorations I was dying to put up only a few weeks before.

With all the holiday loveliness behind me for the moment it's time to focus on more on things of the fun nature! I saw a version of  these adorable little cake pops on Bakerella's site a while back and have been looking for an opportunity to make them!


Lucky for me a reason found me!   A little girl's ice cream birthday party to be exact!And to boot I figured I would let you all know how I made them, so you can make them to!!!

This is what you will need!


  • Prepared Cake..Your choice of flavor
  • Chocolate frosting {Recipe Here} or Vanilla Frosting {Recipe Here} or store bought frosting.
  • 14 oz. Pkg. Pink  Candy Melts
  • 14 oz. Pkg. Dark Chocolate Candy Melts
  • Sugar Ice cream Cones
  • Red Candies (For the cherry)
  • Approx. 25 6" inch Lolly Pop Sticks
  • Sprinkles
  • Styrofoam or something to place pops into.
  • If your going to make them into favors you will also need 8" inch cellophane bags and ribbon of your choice.

Keep in mind you can make these in any flavor or color combination you want. I am only offering you the guidelines of what I made in order for you to make your own spectacular creations! So get those creative wheels turning and create something awesome!!

First get all your ingredients together and make your cake, When it has cooled completely, crumble it up in a bowl. Add in your frosting about 1/3 of a cup. Mix it well using the back of a large spoon or your hands.



In my own journey of making cake pops, I have learned a few things along the way. I am in no way, shape or form anything close to an expert on these little delish delights, but I have figured a few things out that make them a bit easier to make and handle, so hopefully what I have learned will help you too!

An annoying problem I always had was that my pops would always ooze oil out of them after the chocolate shell had hardened. I thought this was from the oil I added to thin out the chocolate coating, but discovered later on it was the oil added into the cake mix that caused the oozing. 

So with a bit of tinkering I now only use 1/4 of  the oil that a box mix calls for (and sometimes none!) and make up the difference with apple sauce. This makes a more dense cake, but it has worked so much better for me than other ways I have tried along the way and still tastes delicious ...please trust me and try it ( You could also do this for cakes as well!) It's important to remember NOT to add in too much frosting. For one 13x9 cake 1/4 to 1/3 a cup pf frosting is more than enough. If you overdo it,  they become too soft, heavy, don't hold a shape and tend to fall off the stick when you are trying to dip them. 

The mixture should be soft, but not too soft :)

If you do the two above things properly...you will never. I repeat never have to refrigerate the cake pops. I never refrigerate them anymore, which frees up a HUGE amount of time. Basically you can roll them out and start dipping them...which also means....NO CRACKED cake pops!!! But there is some stuff you need to do before the big dip, so lets get started.

While my cake was baking and cooling, I made use of the time by preparing the cones. I used regular sugar cones and a sharp serrated knife to cut them down.


With the opening facing me, I scored the cone all the way around, by rolling the cone and keeping the knife steady. This is what they will look like after you make the mark.


Keep rotating the cone until you get a good mark and then you can just crack the top part off, but if your REALLY lucky, like I was after a while, this will happen!


Take your time and try to get as clean as a cut as you can, it makes placement of the cake pop later on much easier, cleaner and of course prettier :) After you cut the tops off of all your cones, it's time to flip them over and cut off the bottoms.


There is no exact science to this part, since the bottom of the cones all vary in degrees of thickness, some you  may have to shave a little off of, while others you may have to cut a bit more. I used a big old cleaver, the heaviness of it helped make a clean cut and if  I had to cut more it let me shave off the amount I needed. You will know if you have cut enough if the candy stick is a snug fit.


If you cut too much off, it's not a big deal, so don't sweat it!! After all this is done, you can put them aside and start rolling out your cake/frosting mixture. For these specific pops, the balls I rolled out were larger than normal cake pops balls. I used a heaping Tbsp. of mixture and rolled them out. This made 25 cake pops. 

When they are all rolled out, you can cover them with wax paper and push them aside as you melt your candy melts and get your candy sticks ready!

I always add in about a tsp. of oil to a package of colored candy melts. This thins the chocolate out enough, so that you can dip them and not have it be a big,  blobby, clumpy mess of chocolate on the end of a stick. I melt my chocolate in a microwave in 30 seconds bursts. Not the clearest picture, but it gives you an idea of what you want the consistency of the melted chocolate to be. It should flow easily...


With a rolled ball in one hand, dip the end of a candy stick into the melted chocolate and insert it almost halfway into the rolled mixture.  This will act as a "glue" to keep pop and stick connected, set aside till the candy melt sets. Do this for all the balls.


After they have all set, it's time to start dipping them. Dip the pop straight down into the melted chocolate and lift up, let  a lot of the excess drip off before sliding the cone onto the candy stick. Push gently down and flip it right side up. If too much chocolate drips down the sides of the cone, be sure to let the next one drip more of the excess off.

Now this is where the fun, fun, fun begins. I LOVE sprinkles and sanding sugar and all things that decorate. So now is the time to sprinkle some decor onto the still melted chocolate. Hold the cone on it's side a roll it as you sprinkle  your choice of decor onto them!


Stick the pop in your block of Styrofoam and repeat until all the pops are coated. They look fun don't they :)


But they are not finished yet. I have never personally ever in my entire life put hot fudge on an ice cream cone,  a sundae yes, ice cream cone..no. But in the world of cake pops it looks cute, cute, cute, so it's allowed :) I melted my dark chocolate candy melts in a plastic squeeze bottle and drizzled it onto the pops. If you don't have a squeeze bottle, you could probably drip the chocolate on top with a spoon!


For the cherry on top I used red sixlets, but if you don't have those available you could use any type of red candy. Because I was making mine to be used as favors I wrapped each one and secured it with a pink ribbon!


Don't they look all pretty nestled together...


Just for kicks here is a different simple version made with White candy melts. As you can imagine the possibilities are really endless..


This is them on display with all the favor tags attached. Sadly this time I can't take the credit for the tags, since the Birthday girl's mom had already made them.
